Hiya! So for the past few
weeksmonths(!!!) I’ve slowly been vaporized by coursework, midterms, and endless deadlines that are apparently the defining feature of senior year. Oh and essays. One cannot forget about the infamous personal statement, UChicago’s (endlessly entertaining) list of essay questions, or (God forbid) Princeton’s adorable list of, quite literately, very short answer questions. I’ve come to dread word limits – thankfully I don’t have one here! As I quickly found out, hyphening random words makes it just ‘one’ word in the eyes of the common app which has literately resulted in me hyphening every word that could-be counted as a compound-word. Yes, just-like that.
The seniors last year were lying when they said senior year is a chill year.
It turns out, senior year is what you make of it. I was going to make it an easy year – three high school classes, two university classes. Then I went kinda spastic and picked another class (like a child at a very expensive candy store), which resulted in the university charging me a flat fee which is only worth it if one is taking 15 or more credits. And thus, I got sucked into taking 16 credits at the university (6 classes) and 3 high school classes. Needless to say, I’ve been running around like a chicken with my head cut off since the school year started. (side note: Did you know chickens can literately be scared to death? Apparently if they become too scared they can have a fatal heart attack…)
The problematic part wasn’t not getting the homework done and/or completely failing the midterms, but getting FOOD! I no longer had time to make brownies, or cookies, or whatever I usually made as a snack. Instead, I was reduced to
stealingartfully hiding my friend’s snack and saying she didn’t pack as much as she thought she did. That was alright until she caught me…
So instead, I decided to make these super easy chocolate covered peanut butter stuffed dates. It’s like a peanut butter sandwich covered in chocolate! Or a peanut butter cup but without the refined sugars! It’s chewy from the dates, crunchy from the hardened chocolate, and so creamy from the honey and peanut butter.
Oh also! I made a buzzfeed-esque video for it! For an entire Saturday, I put the lab notebook and webassigns to the back burner and filmed with a cheap $20 tripod duck taped to my kitchen table. And then it took me another few weeks to edit it because I had to do those webassigns and pre/post labs. So now, I finally have it done and I really hope y’all enjoy it! 😀
Chocolate Covered Peanut Butter Stuffed Dates
- 1-2 tsp honey
- 1-2 heaping tbsp peanut butter
- 8-10 dates
- 1/2 cup chocolate melted
Mix the honey and peanut butter together. Put in a plastic bag with a hole cut out of a corner, if desired.
Either squeeze or scoop it into a slitted date, where the seed was.
Dip in melted chocolate and freeze.
