No Knead Yeast Doughnuts for Everyone

I don’t like doughnuts.

For my brother, the doughnut freshly dusted with snowy white sugar. So we can watch the sun rise in the horizon together while he complains about not being able to watch Pokemon and about how much he doesn’t like doughnuts. He is stubborn -like me. He laughs with white snow on his face, as a warm yellow glow appears in the room. I watch as he carefully stuffs the last airy bite into his mouth and rubs his sticky fingers onto his shirt.

For my dad, the plain doughnut -crispy and fresh out of the fryer. I don’t like doughnuts he says, carrying it wrapped in a paper towel with a bottle of coke in the other hand. He doesn’t need more sugar. I watch as he takes a bite before he grabs his keys, his eyes growing a little wider. Maybe just one more he insists, picking another bubbly hot doughnut, crackling with hot oil before running out the door.

For my mom, the freshly made doughnut sparkling with coarse white sugar and a spicy bright cinnamon cardamon mixture. I don’t like doughnuts she insists stubbornly, sipping a little bit of tea. I watch as she tears into the innocent white center, her fingers sparkling slightly sweet and spicy. An afternoon doughnut, for after work and watching the sunset with me. I watch as the last light goes out and the last crystal disappears. She hesitantly reaches for another. Doughnuts are evil she insists.

For me, the doughnut with a thin layer of glaze, opaque and transparent. For my friends, the doughnuts covered in bright glaze and sprinkles. For my neighbors, a variety -just because doughnuts are evil and I know you don’t like doughnuts.

No Knead Yeast Doughnuts


  • 1 cup 238 g lukewarm milk
  • 1 tbsp 9 g yeast
  • 3 tbsp 38 g sugar
  • 1/2 cup 113 g butter, melted
  • 2 3/4 cup 378 g flour
  • 1 tsp salt
  • 1 tbsp 8 g vanilla
  • 2 eggs
  • 1 egg yolk
  • 1 cup 155 g flour


  1. Dissolve the yeast in water and add the rest of the ingredients except the 1 cup of flour. Stir thoroughly until there are no floury bits. Add the rest of the flour ~1/4 of a cup at a time until the dough pulls away from the side of the bowl but is still very sticky.
  2. Cover with plastic wrap and let rise in the refrigerator for 6-12 hours.
  3. Roll the cold dough out 1/4 inch thick on a well floured surface and cut out circles, holes, or whatever shape you prefer.
  4. Place on parchment paper, about 1.5 inches apart, reroll the dough and repeat the steps until there is no dough left..
  5. Let rise for 1-2 hours until very puffy. A good way to tell if they're fully proofed is poke it firmly with your finger and if the indention stays, they're ready; if it bounces back, let rise for another 15-20 minutes and check again; if the entire doughnut falls after a firm poke, the dough has over risen -try not to get to that point.
  6. Heat a 2 inch pot of oil (I used a deep pot so it would prevent splatters but I dunno if that actually works...) until a small piece of dough sizzles immediately after dropped in (ideally, 375 F). Fry each doughnut until golden brown on one side, flip, and take out when golden brown on the other side.
  7. Best freshly made (or at least within the same day).

    Ahh, Anne! These pictures are SO pretty. My favorite food in the whole entire world are donuts (I have a sophisticated palette), so looking at these makes me SO happy. I love plain chocolate frosted donuts with an abundance of rainbow sprinkles (they add an amazing crunch). I just changed the background of my iPhone to a picture of these donuts, I am obsessed. ๐Ÿ™‚

      Thank you so much Hira -that made my day! I love doughnuts too (just like you, I have a very sophisticated palette ? ) And also, RAINBOW SPRINKLES would have totally made these the bomb but I donโ€™t keep a supply of them at my houseโ€ฆ ?

    Love these doughnuts in particular. They are so gorgeous and your pictures are sp creative and stunning! Wow
    Actually, I don’t like doughnuts. Unfortunately. And I mean it. I would love to dig into one of those amazing looking buns with gorgeous toppings, but I just don’t like the taste. I think I’ll enjoy the sight of your pictures instead ๐Ÿ™‚

    i am a fan of donuts, though i do not partake often. i adore boston creme pie which reminds me of my grandfather, but a simple glazed is fine too.

    these looks so very delectable, almost too perfect to snatch and nosh on. *almost*

    did you use bread flour or al purpose flour for this beautiful donut?

      all purpose I think but either would work!
