Peanut Butter Caramel Chocolate Popcorn

April 12, 2015 | 22 comments

This recipe has a lot of adjectives. Let’s break it down shall we?

Peanut butter caramel: You thought that was two components? Well, kind of. It’s more like caramel with peanut butter stirred in.

Chocolate: because chocolate makes everything in life improve (I think I’ve already told you this x2000)
Popcorn: I don’t mean the kind that you microwave ewww. Freshly popped in fragrant coconut oil

And I thought peanut butter cups were good.

Notes

-Don’t get burnt.
-If you add in pretzels, it gets even better.
-Add in however much salt you wish.

Peanut Butter Caramel Chocolate Pop
1/2 cup popcorn kernels
1 tbsp coconut oil
1/4 cup sugar
2 tbsp honey
3 tbsp peanut butter
3 tbsp chocolate
salt

Melt the coconut oil in a large, deep saucepan with a lid over medium heat. Add in the popcorn kernels and cover. As soon as one kernel pops, start shaking the pan until the popping slows down. Pour into a large pan/bowl.

In a small saucepan, add in the sugar and the honey. Boil for 2 minutes over medium heat. Add in the peanut butter and stir. Pour over the popcorn and mix well. Pour into a baking pan.

Melt the chocolate and drizzle over the pan of popcorn. Sprinkle on some salt.

Eat immediately.

Anne, I love your blog! Especially your super awesome tree logo. So genius! This popcorn looks insanely delicious. I love PB & chocolate combos to the moon and back, and have really been digging popcorn lately. Have you tried Chicago mix before? It’s part caramel corn, part cheddar corn. SO GOOD.

Hahaha thanks so much Kylie!!! It means a lot, coming from the creator of your gorgeous blog!!!
The tree logo was kinda on a whim because I needed something to fit the space and the only icon that photoshop had that looked good was a pine tree. So, there it went!!
I have never tried Chicago mix!! I believe I have to soon though… that combo sounds absolutely delicious! 😀
