Healthy Chocolate Covered Coconut Balls aka Mounds Bars {vegan, gluten-free, raw}

Yep, I’m still here.

You’d think I would be done with all my endless piles of projects and assignments by now right?

ha

hahahaha

All of these projects are due the. exact. same. week. in. march.

I mean I should look forward to March right? So many fun holidays (Pi day!) and it’s finally supposed to stop snowing. However, three projects due on the same week + presentations does not make a girl happy.

I promise, come mid-March (aka spring break) and end of May, WE WILL CELEBRATE! But for now, enjoy these super simple, easy, healthy coconut candies!

Healthy Chocolate Covered Coconut Balls aka Mounds Bars {vegan, gluten-free, raw}
Coconut middle
3/4 cup shredded, unsweetened, dried coconut
1 1/2 tsp maple syrup
pinch of salt
Chocolate covering
1 tbsp coconut oil, melted
4 tbsp cocoa powder
1 tbsp maple syrup

Mix all the ingredients of the coconut middle in a food processor and blend until it can be moulded into balls.

Shape into little balls.

Combine all the ingredients of the chocolate covering.

Drizzle the chocolate covering over the coconut balls.
