I never knew granola could be so easy. The granola circulating the internet seems to always be the kind made in the oven -golden, delicious, addicting, but it takes a freaking 45 some minutes of just being in the oven, not mentioning one has to stir every 15 minutes.
Um hello? How am I supposed to resist the stupidly tempting smells of cinnamon, sugar, and OATS????
So I made it on the stovetop so that it takes like 5 minutes to cook, 5 minutes to prep (or less if you’re not stuck cutting almonds) and voila, breakfast/snack. This granola is delicious, healthy and satisfying with minimal amounts of fat + sugar. The little crunchy oats are perfect with a bowl full of yogurt and fresh fruit or jam.
-For chewy granola, add the honey to the pan and then pour into a pan immediately to cool.
-I like to add in some chopped almonds and toasted coconut every time. I highly recommend adding them.
-Add in whatever you want, just make sure the add-ins don’t go over 1 cup.
Toast each ingredient separately over medium heat (no need to toast if already cooked/toasted and no need to toast dried fruits or little tiny seeds (aka chia, flax)). Toast the first ingredient for 3 minutes (because stove still needs to get hot) and everything else for 2 minute or until fragrant.
In the same pan, add in the honey/maple syrup and butter/coconut oil and the ingredients and stir for 2 minutes over medium heat. Transfer to a pan and let it cool. Stir every now and then if you don't want chunks.
