Pavlovas with Coconut Whipped Cream and Strawberries

Have you ever experienced a time where a person would think you could read their mind? Those people make me mad. And very annoyed at them.

Most of them get annoyed at you first, and then says something in a voice that makes you think they already said it. Which is completely untrue, but makes me think they already said it. And then I dig my memory to find it. Until I ask a friend if they’ve already said it. And if they stare at me, then I know that person expects me to read their mind. Which unfortunately I cannot do. But It would be an amazing superpower!!

I mean seriously, how many times does a person read one’s mind per day? I’ll tell you mine… ZERO!!! A mind blowing number of zero. I never read one’s mind, and I never assume one can read mine. Until of course, they act like I can read theirs.

Then I start acting like they do to me. You know? They tell you, treat people like the way you want to be treated. If I treat them nicely, they should do the same. And if they decide you’re not worth it, then so be it. Because that person isn’t worth it either. End of discussion. :)

These pavlovas are crunchy and melt in your mouth on the outside, and pillowy soft on the inside. Aka YOU should make them!!! 😀

Pavlovas with Coconut Whipped Cream and Strawberries
4 eggs
3/4 cup sugar
2 tsp cornstarch
1 tsp vinegar
2 tbsp sugar
1/2 cup coconut cream (put a full fat can of coconut milk in refrigerator for 24 hrs. The cream is the hardened stuff at the top)
strawberries

Whip the egg whites and 3/4 cup sugar together until stiff peaks form. Then stir in the vinegar and cornstarch.

Spoon onto baking sheet and make indents for whipped cream.

Bake at 300 F for 1 hour.

Let them cool.

Meanwhile, make the coconut whipped cream by adding coconut cream and the 2 tbsp sugar in a bowl. Whip until stiff peaks form.

Spoon the whipped coconut cream onto the pavlova and garnish with strawberries.

    Anne, tu as aussi de superbe pouvoir! Tu peux lire dans ma tête! Je voulais réaliser des pavlova, et voila que tu les faits! J’ai trop envie de les gouter!!!!
