Cranberry Pistachio Bars

I get hungry easily. Maybe its because I’m constantly doing something. I get hungry especially right after gym class. Of course, I shouldn’t be hungry because lunch was just an hour or two ago.

Anywho, I’m still hungry so, I need something to fill me up. I saw some energy bars that looked straight forward without any added sugar on use real butter a couple weeks ago and I have wanted to make them since. They were so pretty…

So I made these as a snack. Cranberry Pistachio Bars.

You get some pretty pistachios. I got some roasted salted ones. I cracked them over a conversation with friends. It’s a good thing to do if you want to do something with your hands!

These pistachios had little papery shells after you peeled them. Not visually or tastely attractive. So I rubbed them together to get rid of the shells. Shake the bowl a bit and they naturally separate.

Add the pistachios into a food processor.

Grind until like sand. FIne with large particles here and there.

Transfer to another bowl. In the food processor, add cranberry and prunes. Zest an orange.

Grind until it looks like this.

Combine the two together. Don’t worry if it looks like it won’t come together at first. It will. Just don’t give up. Also, it’s way easier to use your hands. And for you dainty little people out there who insist on using a spoon/spatula/fork, time yourself so I can laugh at you later. But seriously, use your hands! If you have connection to the internet to read this post, I’m pretty sure you have access to water to wash your sticky hands!

Smoosh into a pan.

Sprinkle over some salt.

Flip it out.

Cut into bars, roll into balls, whatever you feel like doing.

Cranberry Pistacho Bars

Inspired from this recipe.

  • 1 cup pistachios
  • 3/4 cup cranberries
  • 9 prunes (about 1/2 a cup worth)
  • Zest from half an orange

Grind the pistachios.
Grind the cranberries, prunes, and orange zest into a semi paste.
Mix everything together.
Smoosh into a rectangular pan and cut out rectangles for bars. You can also shape them into balls or any other shape.
